The Raspberry Colada
I have this thing for Coladas. I love them. Every time I have a Colada of any kind I am instantly transported back to all my vacations in tropical paradises. I adore the classic
Pina Colada, but I'm not at all adverse to adding more fruits. Mostly I add strawberries in my
Strawberry Colada, but I had raspberries the other day and no strawberries and was in the mood to have a little beach time (thanks to being subjected to the high desert temps of Tucson) so....
The Raspberry Colada Recipe
1 Oz. Raspberry Vodka
1 Oz. Coconut Rum
1 Oz. Pineapple Rum
1 Oz. Coconut Water
Juice of ½ a Lime
1 Oz. Pineapple Juice
1/3 C. Coconut Flakes
1/4 C. Sugar
Pineapple Spear & Raspberries Garnish
Grind the coconut flakes with the sugar until you have a coarse powder. Dip your glass rim in some pineapple juice, then into the coconut sugar and chill in the freezer. Pour the vodka and the rums, the coconut water and the pineapple juice into a martini shaker with ice and shake until well chilled. Pour into your cold martini glass, garnish with your pineapple spear, if you have it, and a few of the raspberries on a cocktail pick and serve.
